Chef’s Tasting Menu

Our Chef’s Tasting Menu is a paired, multi-course dining experience that reflects the essence of HT’s cuisine, hospitality and philosophy.

Over six to eight courses, curated weekly, we walk through Texas farms and vegetables, meats and game, seafoods, grains and seasonings in a way that is meant to help illustrate what it means to be Texas Cuisine.

Our intention with HT and our whole animal philosophy, is to take that same approach: find these farms and ranches and do the most we can with them while wasting the very least. We want to define Texas Cuisine not by running parallel with a stereotype, but rather by finding these ingredients and using whatever techniques we have in our repertoire to transform them into something exceptional and memorable. We want to determine our cuisine by the food that we can find within our reach.  And we grow our culinary culture with those who grow the ingredients for it.
